“Dish” in bicycle terminology is the way that the spokes are not set straight in the rear wheel in order to accommodate the gears when the wheel is in the center of the frame. On a rear derailleur bike, the side of the hub must have room for multiple gears, so the spokes are positioned in a slightly more sloped position on that side. When the wheel is “dished” appropriately, it will remain even in the center, which is useful for heavy loads. Wheel truing stands have a dish tool in order to ensure that the rim is precisely in the center when being attached.
