“Snail’s pace” is a phrase that describes very slow motion. It is used in a joking manner in endurance sports to refer to running recoveries, warm-ups, or when the runners are exhausted.
Going slow as a snail in a workout session refers to going slow deliberately in order to recover, maintain low heart rates, or indicate how a person feels when having a tough day. People might use this in a tongue-in-cheek tone, but going slow may very well be what the body requires following intense workouts, particularly in the case of long-term endurance conditioning.
