Avocado Toast Delight

minutesNot every avocado toast is alike, and there is a reason why we call ours ‘delight’. For the little investment of time it takes, this dish truly never disappoints in flavor and satisfaction. A good dose of healthy fats make this a great recipe on longer lower intensity training days – just make sure to wait a few hours before you head out on your run, ride or whatever it is you are doing!

Ingredients
2 slices 2 bread: sourdough, sprouted, gluten-free… You choose!
1 Medium 1 avocado
1/2 t 1/2 lemon, or lime juice
1/4 t 1/4 garlic powder
4 t 4 yellow, miso paste
1 Medium 1 sliced cucumber
1/8 1/8 raw, red onion, sliced rings, or diced
10 10 grape tomatoes, halved
1 1 green onion, diced
1/2 c 1/2 arugula
1/4 c 1/4 sprouts, such as broccoli or alfalfa
salt and pepper, to taste
Directions
- Scoop the avocado into a bowl, add lemon or lime juice.
- Scoop the avocado into a bowl, as a lemon or lime juice, garlic powder, a pinch of salt and pepper, and then mash it with a fork. Leave a few cubes of avocado for texture.
- Spread 2 teaspoons yellow miso paste across each toast (2 t each toast)
- Layer the sliced cucumber over the avocado, put on the red onions, then sprinkle the green onions, followed by adding the arugula, have tomatoes and top with sprouts.
- Add a pinch of salt and a turn or a crack pepper
- Serve immediately, as once avocado oxidizes, it looks unappetizing
