Nothing but Green Pea Soup

Green split peas meld seamlessly with aromatic onions, carrots, and celery, simmered to perfection in a rich vegetable broth. The addition of mint adds a refreshing and aromatic twist to the traditional pea soup, elevating its flavor profile.

Ingredients
2 cup 2 dried green split peas, rinsed and drained
1 1 onion, chopped
2 2 carrots, chopped
2 2 celery stalks, chopped
4 cloves 4 4 cloves garlic, minced
6 cups 6 vegetable broth
2 2 bay leaves
1 tsp 1 dried thyme
1.4 cups 1.4 fresh mint leaves, chopped
to taste to taste salt and pepper
Chopped fresh parsley for garnish (optional)
Directions
- In a large pot, sauté the onion, carrots, celery, and garlic in a bit of vegetable broth until softened.
- Add the dried split peas, vegetable broth, bay leaves, thyme, and half of the chopped mint leaves. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 45-60 minutes, or until the peas are soft and the soup is thickened.
- Remove the bay leaves and season with salt and pepper to taste.
- Stir in the remaining chopped mint leaves.
- Blend gently with an immersion blender or Vitamix
- Serve hot, garnished with chopped fresh parsley if desired.
