Green split peas meld seamlessly with aromatic onions, carrots, and celery, simmered to perfection in a rich vegetable broth. The addition of mint adds a refreshing and aromatic twist to the traditional pea soup, elevating its flavor profile.

Ingredients

  • 2 cup 2 dried green split peas, rinsed and drained

  • 1 1 onion, chopped

  • 2 2 carrots, chopped

  • 2 2 celery stalks, chopped

  • 4 cloves 4 4 cloves garlic, minced

  • 6 cups 6 vegetable broth

  • 2 2 bay leaves

  • 1 tsp 1 dried thyme

  • 1.4 cups 1.4 fresh mint leaves, chopped

  • to taste to taste salt and pepper

  • Chopped fresh parsley for garnish (optional)

Directions

  • In a large pot, sauté the onion, carrots, celery, and garlic in a bit of vegetable broth until softened.
  • Add the dried split peas, vegetable broth, bay leaves, thyme, and half of the chopped mint leaves. Bring to a boil.
  • Reduce heat to low, cover, and simmer for about 45-60 minutes, or until the peas are soft and the soup is thickened.
  • Remove the bay leaves and season with salt and pepper to taste.
  • Stir in the remaining chopped mint leaves.
  • Blend gently with an immersion blender or Vitamix
  • Serve hot, garnished with chopped fresh parsley if desired.
